Raspberries are washed and dried.

Separate the yolks from the eggs and beat with the cane sugar into a creamy mass.

Add the cheese, liqueur, milk, lemon juice and zest in small portions while beating. It should be a thick, creamy mass that holds its shape well.

Add the raspberries to the mixture and whisk for a few seconds.

Transfer the mass to a plastic container and put it in the freezer for 1 hour. After the time has passed, whip the mass and put it back in the freezer. Ideally, this should be done three times. In order for the ice cream to have a velvety structure and not to form ice crystals.
