1. Stage
For the sponge cake, separate the whites from the yolks. Whites whip into a foam. Set aside.

Whip the yolks with the cane sugar.

Add melted butter, ground and roasted almonds, starch, flour, baking soda and cocoa. Stir to mix.

Stir in the whipped egg whites. Pour the ready dough into a greased mold (20 cm shape). Bake at 180 C for about 40-50 minutes.

Let the biscuit cool and cut it into 2-3 layers. Defrost the cherries for the filling and soak the cakes in their juice.

For the cream, whip the cream with powdered sugar.
7. Stage
Cream the soaked cakes and spread the cherries on the cream. Put the assembled cake in the cold to stiffen a little. Then decorate to your liking.
