1. Chicken stock 5 cups
2. Water 5 cups
3. White rice 1 cup
4. Apple cider vinegar ¼ cup
5. Fish sauce 2 tablespoons
6. Grated fresh ginger 1 tablespoon
7. Salt 1 teaspoon
8. Sesame oil ¼ teaspoon
9. Lean white fish, sliced 2 (6 ounce) fillets
10. Pickled Chinese vegetables ¼ cup
11. Sliced Chinese roast pork ¼ cup
12. Chopped scallions 2 tablespoons
13. Crushed peanuts 2 tablespoons
14. Vinegar, or to taste ½ teaspoon
15. Soy sauce, or to taste ½ teaspoon

How to cook deliciously - Congee

1 . Stage

Combine chicken stock, water, rice, 1/4 cup apple cider vinegar, fish sauce, ginger, salt, and sesame oil in a large stockpot; bring to a boil. Reduce heat and simmer until congee has thickened to the consistency of a light porridge, about 3 hours.

2 . Stage

Stir fish into congee and simmer until cooked through, about 10 minutes.

Serve congee in bowls topped with pickled vegetables, roast pork, scallions, and peanuts. Drizzle 1/2 teaspoon vinegar and soy sauce over toppings.
