Ingredients for - Egusi Soup

1. Pumpkin seeds - ¾ cup
2. Cubed beef stew meat - 1 ½ pounds
3. Salt to taste - 1 ½ pounds
4. Peanut oil - ½ cup
5. Tomatoes, chopped - 2 large
6. Onion, chopped - 1 small
7. Habanero peppers, seeded and minced - 2
8. Fresh shrimp, peeled and deveined - 2 pounds
9. Tomato sauce - 18 ounces
10. Water - 1 ½ cups
11. Tomato paste - 3 tablespoons
12. Fresh spinach, washed and chopped - 1 pound

How to cook deliciously - Egusi Soup

1. Stage

Place pumpkin seeds in a blender; blend until mixture is powdery, 30 to 40 seconds. Set aside.

2. Stage

Cut beef into bite-sized cubes; season with salt.

3. Stage

Heat oil in a large pot over medium-high heat. Cook beef in hot oil until brown but not cooked through, 3 to 5 minutes.

4. Stage

Place tomatoes, onion, and peppers in a blender; blend until smooth, about 30 seconds. Stir tomato mixture into beef; reduce heat to medium-low and cover. Cook until meat is tender, 40 to 50 minutes.

5. Stage

Add shrimp, tomato sauce, water, and tomato paste; simmer for 10 minutes.

6. Stage

Stir in spinach and powdered pumpkin seeds. Continue simmering for 10 more minutes.
