1. White rice 1 cup
2. Water 2 cups
3. Diced tomatoes, drained 1 (14.5 ounce) can
4. Red wine vinegar ⅓ cup
5. Garlic, minced 3 cloves
6. Ground cumin 1 tablespoon
7. Chili powder 4 teaspoons
8. Salt 1 ½ teaspoons
9. Oregano 1 teaspoon
10. Ground black pepper to taste 1 teaspoon
11. Canola oil ¾ cup
12. Black beans, drained and rinsed 3 (15.5 ounce) cans
13. Frozen corn, thawed ½ (10 ounce) box

How to cook deliciously - Kelly's Black Bean Salad

1 . Stage

Bring rice and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and the liquid has been absorbed, 20 to 25 minutes.

2 . Stage

Mix tomatoes, vinegar, garlic, cumin, chili powder, salt, oregano, and black pepper together in a bowl. Whisk oil into tomato mixture to make a dressing.

Stir rice, black beans, and corn together in a bowl; toss with dressing until well-coated.
