1. White rice - 1 cup
2. Water - 2 cups
3. Diced tomatoes, drained - 1 (14.5 ounce) can
4. Red wine vinegar - ⅓ cup
5. Garlic, minced - 3 cloves
6. Ground cumin - 1 tablespoon
7. Chili powder - 4 teaspoons
8. Salt - 1 ½ teaspoons
9. Oregano - 1 teaspoon
10. Ground black pepper to taste - 1 teaspoon
11. Canola oil - ¾ cup
12. Black beans, drained and rinsed - 3 (15.5 ounce) cans
13. Frozen corn, thawed - ½ (10 ounce) box

1. Stage

Bring rice and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and the liquid has been absorbed, 20 to 25 minutes.

Mix tomatoes, vinegar, garlic, cumin, chili powder, salt, oregano, and black pepper together in a bowl. Whisk oil into tomato mixture to make a dressing.
