How to cook deliciously - Fluffy White Frosting
1. Stage
Using a stand mixer and heatproof bowl, whisk the egg whites, sugar, water and cream of tartar until blended. Editor’s tip: To separate the egg whites, we recommend using your hands. Using the egg shell method runs a greater risk of rupturing the yolks.
2. Stage
Fill a large saucepan with about 2 inches of water and bring it to a simmer. Next, place the heatproof bowl of frosting in the saucepan and whisk constantly. Heat the mixture until it reaches 160°F, for about three to five minutes. Editor’s tip: The heatproof bowl should snugly fit into the saucepan without touching the water at the bottom of it.
3. Stage
Remove the bowl of frosting from the heat and add the vanilla. Heat and add the vanilla. Using the whisk attachment of a stand mixer, beat on high until stiff, glossy peaks form. This should take about seven minutes. Editor’s tip: The frosting texture declines over time and it’s best to use it immediately.
