1. Zucchini, thinly sliced - 4 small
2. Sweet onion (such as Vidalia®), thinly sliced - ½ small
3. Fresh parsley, minced - ½ bunch
4. Lemon, zested and juiced - 1
5. Dijon mustard - 1 teaspoon
6. White sugar - 2 teaspoons
7. Salt and ground black pepper to taste - 2 teaspoons
8. Light olive oil - ¼ cup

1. Stage

Place zucchini slices in a colander for 10 minutes, allowing juices to release; pat dry.

Combine zucchini, onion, and parsley together in a bowl.
