Ingredients for - Microwave Mashed Potatoes

1. 2 lb. Yukon gold potatoes, peeled and cut into 1 ½” to 2” pieces -
2. 3/4 c. whole milk -
3. 4 tbsp. butter -
4. 2 tbsp. sour cream -
5. 2 tsp. kosher salt -
6. Freshly ground black pepper -
7. Sliced chives, for garnish -

How to cook deliciously - Microwave Mashed Potatoes

1. Stage

Add potatoes to a large bowl and cover tightly with plastic wrap. Make a few vents in the plastic wrap with a fork.

2. Stage

Microwave on high for 8 ½ to 10 minutes, or until the potatoes are tender and can be easily pierced with a fork. Mash potatoes with a masher or by running through a ricer; return to the bowl.

3. Stage

Add milk, butter, sour cream, and salt. Microwave for an additional 15 to 25 seconds, just until the milk is warm and the butter is softened.

4. Stage

Fold everything together, season to taste with salt and pepper, and garnish with chives.
