How to cook deliciously - One-Pot Lentil & Sausage Soup
1. Stage
In a large pot over medium heat, melt butter. Add onion and carrot and cook until softened, 5 minutes.
2. Stage
Add lentils, bay leaf, and vegetable bouillon, breaking it up with a wooden spoon. Season with pepper. Add 6 cups water and bring to a boil. Reduce heat to a simmer and cook, covered, until lentils are tender, about 20 minutes.
3. Stage
Place whole sausage into the pot and stir. Cook, covered, until sausages are cooked through, 15 minutes.
4. Stage
Remove sausages from pot and slice. Stir back into pot and season soup with salt. Increase heat to medium-high and cook, stirring frequently, until lentils have broken down and soup thickens.
5. Stage
Garnish with parsley before serving.
