1. Coarse salt and ground pepper -
2. 12 oz. ridged penne rigate -
3. 1 lb. asparagus -
4. 1 lb. peeled deveined frozen shrimp -
5. 8 oz. snow peas -
6. 3 tbsp. olive oil -
7. 2 tbsp. fresh lemon juice -
8. 2 clove garlic -
9. 1 c. crumbled feta (4 ounces) -
10. 1/4 c. thinly sliced fresh mint leaves -

How to cook deliciously - Penne with Shrimp, Feta, and Spring Vegetables

1. Stage

In a large pot of boiling salted water, cook penne 5 minutes less than al dente. Add asparagus; cook 3 minutes. Add shrimp and snow peas; cook 2 minutes. Reserve 1/2 cup pasta water; drain pasta mixture, and return to pot.

2. Stage

To pasta mixture, add oil, lemon juice, garlic, and cup reserved pasta water. Season with salt and pepper, and toss to combine.
