Ingredients for - Pesto Shrimp Skewers

1. 1 lb. medium or large frozen shrimp, deveined, thawed -
2. Extra virgin olive oil, for drizzling -
3. Kosher salt -
4. Freshly ground black pepper -
5. 1/2 c. store-bought or homemade pesto, plus more for serving -
6. 3 lemons, halved -
7. 8 skewers (if using wooden skewers, soak in water at least 20 minutes before using) -

How to cook deliciously - Pesto Shrimp Skewers

1. Stage

Prepare a grill for medium-high heat (or heat a grill pan over medium-high heat); preheat 5 minutes. Skewer shrimp and drizzle with oil; season with salt and pepper. Brush with pesto.

2. Stage

Grill, turning occasionally, until shrimp is opaque, 4 to 5 minutes. Transfer to a platter.

3. Stage

Grill lemons cut side down until charred in spots, 2 to 3 minutes. Arrange next to shrimp for squeezing over. Serve with more pesto alongside.
