1. Green cabbage, cored and thinly sliced 1 small head
2. Black beans, rinsed and drained 1 (15 ounce) can
3. Frozen corn, thawed 2 cups
4. Grated carrots 2 cups
5. Bell peppers, diced 2
6. Chopped cilantro 1 cup
7. Sour cream 1 ½ cups
8. Chopped fresh cilantro 1 ½ cups
9. Green onions, green parts only, chopped 3
10. Limes, zested and juiced 2
11. Garlic 1 clove
12. Kosher salt ½ teaspoon
13. Cayenne pepper 1 pinch

How to cook deliciously - Vegetarian Taco Slaw with Creamy Cilantro-Lime Dressing

1 . Stage

Combine cabbage, black beans, corn, carrots, bell peppers, and 1 cup cilantro in a large bowl. Toss lightly until mixed.

2 . Stage

Place sour cream, 1 1/2 cups cilantro, green onions, lime juice and zest, garlic, salt, and cayenne in the bowl of a food processor. Pulse on and off 5 or 6 times to completely blend.

Pour dressing over cabbage mixture and toss to coat evenly.
