Ingredients for - Jollof Rice

1. Olive oil 1 tablespoon
2. Onion, sliced 1 large
3. Stewed tomatoes 2 (14.5 ounce) cans
4. Tomato paste ½ (6 ounce) can
5. Salt 1 teaspoon
6. Black pepper ¼ teaspoon
7. Cayenne pepper ¼ teaspoon
8. Red pepper flakes ½ teaspoon
9. Worcestershire sauce 1 tablespoon
10. Chopped fresh rosemary 1 teaspoon
11. Water 2 cups
12. Whole chicken, cut into 8 pieces 1 (3 pound)
13. Uncooked white rice 1 cup
14. Diced carrots 1 cup
15. Fresh green beans, trimmed and snapped into 1 to 2 inch pieces ½ pound
16. Ground nutmeg ¼ teaspoon

How to cook deliciously - Jollof Rice

1 . Stage

Pour oil into large saucepan. Cook onion in oil over medium-low heat until translucent.

2 . Stage

Stir in stewed tomatoes and tomato paste, and season with salt, black pepper, cayenne pepper, red pepper flakes, Worcestershire sauce and rosemary. Cover, and bring to a boil. Reduce heat, stir in water, and add chicken pieces. Simmer for 30 minutes.

3 . Stage

Stir in rice, carrots, and green beans, and season with nutmeg. Bring to a boil, then reduce heat to low. Cover, and simmer until the chicken is fork-tender and the rice is cooked, 25 to 30 minutes.
