Ingredients for - Avocado Pesto

1. 1 lb. spaghetti -
2. 2 avocados, pitted -
3. 2 c. Fresh basil -
4. 1/4 c. almonds -
5. Zest of 1 lemon -
6. 1/4 c. grated Parmesan -
7. Kosher salt -
8. 1/4 c. olive oil -
9. 1 c. grape or cherry tomatoes, halved -

How to cook deliciously - Avocado Pesto

1. Stage

Cook pasta according to package directions. Reserve about 1 cup of cooking water.

2. Stage

Meanwhile, in a food processor or blender, pulse together avocado, basil, almond, lemon zest, and parmesan. Season with salt. With the motor running, slowly drizzle in olive oil until evenly blended. If the pesto is too thick, add pasta water until you reach the desired consistency.

Toss pesto with the warm spaghetti and add tomatoes. Serve immediately.
