1. 3 tbsp. unsalted butter
2. 2 large red onions, halved and thinly sliced
3. Kosher salt
4. 3 garlic cloves, minced
5. 1/2 tsp. chopped fresh thyme leaves
6. 1/2 lb. pizza dough, room temperature
7. 1/2 c. dry white wine, such as Sauvignon Blanc
8. All purpose flour, for dusting
9. 3/4 c. Treasure Cave® Crumbled Blue Cheese
10. 2 tbsp. lightly toasted pine nuts
11. 1/2 packed baby arugula

How to cook deliciously - Caramelized Onion, Garlic, And Blue Cheese Flatbread

1 . Stage

In a large skillet, melt butter over medium heat. Add the onions and ¼ teaspoon salt and cook, stirring occasionally, until they are golden, about 30 minutes. Add garlic and thyme, and cook, stirring, until fragrant and light golden, about 1 minute more. Pour in wine and cook, stirring, until wine is almost completely evaporated, about 2 minutes more. Remove from the heat.

2 . Stage

Preheat oven to 425°. Lightly dust a large piece of parchment paper with flour and stretch or roll pizza dough to a rounded rectangle about 14" by 10". Slide parchment and dough onto a baking sheet.

3 . Stage

Top flatbread with caramelized onion mixture, leaving about a ½-inch border. Bake until flatbread is crisp on the bottom and golden, 20 to 25 minutes. Brush crust with olive oil. Remove from oven and sprinkle with arugula, Treasure Cave® Crumbled Blue Cheese, and pine nuts. Slice, and serve.
