Ingredients for - Nachos

1. 1 tbsp. extra-virgin olive oil -
2. 1 large yellow onion, chopped -
3. 1 lb. ground beef -
4. 2 cloves garlic, finely chopped -
5. 1 tbsp. taco seasoning -
6. Kosher salt -
7. 1 (15-oz.) can refried beans -
8. 1/4 c. water -
9. 1 large bag tortilla chips, divided -
10. 2 c. shredded cheddar, divided -
11. 2 c. shredded Monterey Jack, divided -
12. 1 (15-oz.) can black beans, drained, divided -
13. 1/2 c. pickled jalapeños, divided -
14. 1 large tomato, finely chopped -
15. 1 avocado, finely chopped -
16. 1/4 c. fresh cilantro leaves (optional) -
17. 1/4 c. thinly sliced scallions -
18. Sour cream and hot sauce, for drizzling -

How to cook deliciously - Nachos

1. Stage

Preheat oven to 425º. In a large skillet over medium heat, heat oil. Add onion and cook, stirring occasionally, until softened, about 7 minutes. Add beef and cook, stirring with a wooden spoon, until no longer pink, about 6 minutes. Drain fat.

2. Stage

Add garlic and taco seasoning; season with salt. Cook, stirring occasionally, until meat is well browned and slightly crispy, about 5 minutes. Add refried beans and water to skillet and stir until combined.

Arrange half of tortilla chips on a foil-lined baking sheet. Top with half of beef-bean mixture, half of cheese, half of black beans, and half of pickled jalapeños. Repeat with one more layer.

Bake nachos until cheese is melted, about 15 minutes.

Top nachos with tomatoes, avocado, cilantro (if using), and scallions.

Drizzle with sour cream and hot sauce and serve immediately.
