1. 1 envelope onion soup mix -
2. 2 garlic cloves, minced -
3. 1 tablespoon dried rosemary, crushed -
4. 1/2 teaspoon salt -
5. 1/2 teaspoon pepper -
6. 1/4 teaspoon ground cloves -
7. 1-1/2 cups water, divided -
8. 1 bone-in pork loin roast (4 to 5 pounds) -
9. 2 to 3 pounds small red potatoes, cut in half -
10. 1-1/2 cups sliced onions -

How to cook deliciously - Roast Pork

1. Stage

Preheat the oven to 325°. In a large bowl, combine the onion soup mix, minced garlic, rosemary, salt, pepper and ground cloves. Stir in 1/2 cup water and let stand for three minutes.

Place the roast, fat side up, on a greased rack in a roasting pan. Pour the remaining water into the pan. Place the potatoes and onions around the roast. Brush the vegetables and roast with the seasoning mixture.

Bake, uncovered, basting occasionally, until a thermometer reads 145°, 2 hours and 30 minutes to 3 hours. Remove the roast from the oven and tent it with foil. Let it stand for 10 minutes before slicing.

If desired, thicken the juices for gravy. Editor's Tip: To make gravy from pan drippings, pour the drippings into a measuring cup and skim the fat. Add enough broth to measure 1 cup. In a small saucepan, whisk 2 tablespoons fat with 2 tablespoons flour until smooth. Gradually stir in the drippings mixture and bring the mixture to a boil. Cook and stir until thickened, about two minutes.
