Place a rack in center of oven; preheat to 350°. In a medium bowl, stir oil, syrup, salt, cinnamon, ginger, and cayenne; season with a few grinds of black pepper. Add pumpkin seeds and toss to coat. Transfer to a parchment-lined baking sheet.
