1. 3 tbsp. extra-virgin olive oil
2. 2 tbsp. pure maple syrup
3. 3/4 tsp. kosher salt, plus more
4. 1/4 tsp. ground cinnamon
5. 1/4 tsp. ground ginger
6. Pinch of cayenne pepper
7. Freshly ground black pepper
8. 2 c. unshelled raw pumpkin seeds

How to cook deliciously - Roasted Pumpkin Seeds

1 . Stage

Place a rack in center of oven; preheat to 350°. In a medium bowl, stir oil, syrup, salt, cinnamon, ginger, and cayenne; season with a few grinds of black pepper. Add pumpkin seeds and toss to coat. Transfer to a parchment-lined baking sheet.

Bake seeds, stirring halfway through, until browned and fragrant, about 25 minutes.

Season seeds with a pinch of salt, then let cool to room temperature, about 15 minutes.
