Ingredients for - Sandy's Summer Sausage

1. Ground beef - 2 pounds
2. Mustard seed - 2 tablespoons
3. Liquid smoke flavoring - 2 tablespoons
4. Sugar-based curing mixture (such as Morton® Tender Quick®) - 2 tablespoons
5. Garlic powder - 1 tablespoon
6. Coarse ground black pepper - 1 teaspoon

How to cook deliciously - Sandy's Summer Sausage

1. Stage

Use your hands to mix ground beef, mustard seed, liquid smoke, curing salt, garlic powder, and pepper together in a large bowl. Form mixture into two equal logs. Wrap logs in aluminum foil with the shiny side facing the meat; refrigerate for 24 hours.

Preheat the oven to 325 degrees F (165 degrees C).

Use a toothpick to poke small holes through the aluminum foil in the bottom of each log. Place logs onto a broiler rack and fill the broiler pan with 1/2 inch water.

Bake in the preheated oven for 90 minutes. Remove from the oven and cool for 30 minutes. Refrigerate until fully chilled, about 12 hours, before unwrapping and serving.
