Ingredients for - Skinny Pineapple Cheesecake Bars

1. 3/4 c. graham cracker crumbs
2. 2 tbsp. butter, melted
3. 6 oz. brick-style light cream cheese, softened to room temperature
4. 3/4 c. plain nonfat Greek yogurt, at room temperature
5. 2 large eggs, plus 1 large egg yolk
6. 1/4 c. sugar
7. 1/3 c. pineapple juice
8. 1 tsp. pure vanilla extract
9. Pineapple and cherries (optional)

How to cook deliciously - Skinny Pineapple Cheesecake Bars

1 . Stage

Preheat oven to 300°. Line the bottom and sides of an 9"-x-9" baking pan with aluminum foil or parchment, leaving an overhang on all sides to easily lift the bars out of the pan before cutting. Set aside.

2 . Stage

Once chilled, lift the foil out of the pan using the overhang on the sides and cut into squares. Garnish with pineapple and cherries and store in the refrigerator.
