1. Water - 5 cups
2. Vegetable bouillon, or more to taste - 2 ½ cubes
3. Dry lentils - 2 cups
4. Carrots, peeled and diced - 5 small
5. Potatoes, peeled and diced - 2 medium
6. Ground cumin, or to taste - 3 teaspoons
7. Ground coriander - 1 teaspoon
8. Olive oil - 1 tablespoon
9. Onion, diced - 1 small
10. Garlic, minced - 4 cloves
11. Tomato paste, or to taste - ½ (6 ounce) can
12. Sea salt, or to taste - ½ teaspoon
13. Freshly ground black pepper, or to taste - ½ teaspoon
14. Fresh spinach, torn - ½ (8 ounce) package

How to cook deliciously - Slow Cooker Mediterranean Lentil Stew

1. Stage

Warm water and vegetable bouillon in a slow cooker on High until dissolved. Add lentils, carrots, and potatoes.

2. Stage

Heat a medium saucepan over medium heat. Add cumin and coriander and cook and stir until fragrant, about 20 seconds. Add oil, followed by onion. Cook, stirring occasionally, 2 to 3 minutes. Add garlic and saute for 30 seconds. Remove from heat and transfer to the slow cooker. Stir. Add tomato paste, salt, and pepper. Stir in spinach.

3. Stage

Cook on High, stirring every 30 minutes, until lentils are tender and stew has thickened, 3 to 4 hours.
