Ingredients for - Southwest Garden Stew

1. Cubed beef stew meat - 6 ounces
2. Onion, chopped - ½ large
3. Garlic, minced - 3 cloves
4. Zucchini, chopped - 1 large
5. Yellow squash, chopped - 1 medium
6. Tomatoes, chopped - 3
7. Chili powder - 1 teaspoon
8. Cumin - 1 teaspoon
9. Dried oregano - 1 teaspoon
10. Italian seasoning - 1 teaspoon
11. Red pepper flakes - ½ teaspoon
12. Cooked chicken breast, cubed - 1
13. Chicken broth - 3 cups
14. Cream or milk - 2 tablespoons
15. Frozen corn - ½ (10 ounce) package

How to cook deliciously - Southwest Garden Stew

1. Stage

Cook beef in a large pot over medium heat until browned on all sides. Stir in onion, garlic, zucchini, squash, and tomatoes. Cook, stirring, for 3 to 5 minutes.

Stir in chili powder, cumin, oregano, Italian seasoning, and red pepper flakes. Stir in chicken, broth, and cream. Cover, reduce heat to low, and simmer 2 hours.

3. Stage

Stir in corn. Cover, and increase heat to medium low. Simmer for 45 minutes. If the stew becomes too thick, stir in a little water to reach the desired consistency.
