Set up a dredging station: In one bowl, add cornstarch. In another bowl, whisk together egg and water. And in a third bowl, add panko breadcrumbs and season with salt, pepper and garlic powder. Toss the chicken in the cornstarch, dip the pieces in the egg mixture, then toss in panko until fully coated.

Fry the chicken! Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken in batches until golden brown and cooked through, about 8-10 minutes. Drain chicken pieces on paper towels. Taste the chicken and season with more salt and pepper if desired.
