1. 1/2 c. plain Greek yogurt -
2. 2 tbsp. buttermilk -
3. 2 tbsp. sliced chives -
4. 1 tsp. dried dill -
5. 1 tsp. dried parsley -
6. 1/2 tsp. garlic powder -
7. 1/2 tsp. onion powder -
8. 2 lb. sweet potatoes (4 to 5), cut lengthwise into wedges -
9. 2 tbsp. extra-virgin olive oil. divided -
10. Fine pink Himalayan salt -
11. 2 tsp. onion powder -
12. 2 tsp. smoked paprika -
13. 1 to 2 tsp. chipotle chile powder -
14. 1 tsp. garlic powder -
15. 1 tsp. ground cumin -
16. 1/2 tsp. dried oregano -
17. 1/4 tsp. crushed red pepper flakes -
18. 1/2 c. cooked black beans  -
19. 3/4 c. shredded sharp cheddar -
20. 1/2 c. shredded pepper Jack cheese -
21. 1 large avocado -
22. Juice of 1 lime -
23. 2 tbsp. chopped fresh cilantro, plus more for serving -
24. Sliced scallions and crumbled feta, for serving (optional) -

How to cook deliciously - Sweet Potato Nachos

1. Stage

In a large bowl, whisk yogurt, buttermilk, chives, dill, parsley, garlic powder, and onion powder. Set aside until ready to use.

Make Ahead: Dressing can be made 5 days ahead. Transfer to an airtight container and refrigerate.

Preheat oven to 425°. On a baking sheet or in a large cast-iron skillet, toss potatoes and 1 tablespoon oil; season with salt. Arrange potatoes in a single layer, being sure not to overcrowd.

Bake potatoes until slightly softened, 15 to 20 minutes.

Meanwhile, in a small bowl, stir onion powder, paprika, chipotle powder, garlic powder, cumin, oregano, red pepper, and remaining 1 tablespoon oil.

Drizzle spice mix over potatoes and toss to coat. Continue to bake until potatoes are crisp on the outside and tender on the inside, 15 to 20 minutes. Remove baking sheet from oven, leaving oven on.

Scatter beans over potatoes, then cover with cheddar and pepper Jack cheese. Continue to bake until cheese is melted and bubbly, 5 to 10 minutes.

In a small bowl, mix avocado, lime juice, and cilantro, mashing up avocado; season with salt, if needed.

Spoon avocado mixture over nachos. Drizzle with dressing, then top with scallions and feta (if using). Sprinkle with more cilantro before serving.
