1. 1/3 cup dry red wine or reduced-sodium beef broth -
2. 1/3 cup reduced-sodium soy sauce -
3. 2 teaspoons minced fresh gingerroot -
4. 1 teaspoon minced garlic -
5. 4 tuna steaks (6 ounces each) -
6. 1 bay leaf -
7. 1 tablespoon olive oil -

1. Stage

In a small bowl, combine the wine, soy sauce, ginger, and garlic.

Pour the marinade into a large resealable plastic bag and add the tuna steaks and bay leaf. Seal the bag and turn it to coat the fish. Then let stand for 15 minutes.

Drain and discard the marinade and bay leaf. In a large skillet, cook tuna in oil over medium-high heat for four to six minutes on each side for medium-rare or until slightly pink in the center. Editor’s Tip: Serve hot, garnished with lemon slices or fresh herbs, if desired.
