3. Onion, diced - 1 medium
4. Red bell pepper, diced - 1 medium
5. Jalapeno pepper, diced - 1 medium
6. Garlic, minced - 3 cloves
7. Chopped collard greens - 4 cups
8. Water - 3 cups
9. Black-eyed peas, rinsed and drained - 2 (15 ounce) cans
10. Fire-roasted diced tomatoes, undrained - 1 (15 ounce) can
11. Smoked paprika - 1 teaspoon
12. Chili powder - 1 teaspoon
13. Liquid smoke flavoring - 1 teaspoon
14. Salt and ground black pepper to taste - 1 teaspoon

How to cook deliciously - Vegan Black-Eyed Pea Soup

1. Stage

Heat olive oil in a large pot over medium-high heat. Add carrots, onion, bell pepper, jalapeno, and garlic; saute until carrots start to soften, about 6 minutes.
