2. Carrots, diced 2 medium
3. Onion, diced 1 medium
4. Red bell pepper, diced 1 medium
5. Jalapeno pepper, diced 1 medium
6. Garlic, minced 3 cloves
7. Chopped collard greens 4 cups
8. Water 3 cups
9. Black-eyed peas, rinsed and drained 2 (15 ounce) cans
10. Fire-roasted diced tomatoes, undrained 1 (15 ounce) can
11. Smoked paprika 1 teaspoon
12. Chili powder 1 teaspoon
13. Liquid smoke flavoring 1 teaspoon
14. Salt and ground black pepper to taste 1 teaspoon

1 . Stage

Heat olive oil in a large pot over medium-high heat. Add carrots, onion, bell pepper, jalapeno, and garlic; saute until carrots start to soften, about 6 minutes.
