1. Coconut oil - 1 tablespoon
2. Jackfruit in brine - drained, rinsed, and cut into bite-sized pieces - 1 (20 ounce) can
3. Onion, chopped - 1
4. Garlic, minced - 3 cloves
5. Ginger, grated - 1 (2 inch) piece
6. Curry powder, or more to taste - 2 teaspoons
7. Vegetable broth - 1 cup
8. Baby corn, drained - 1 (8 ounce) can
9. White potatoes, cubed - 1
10. Coconut milk - 1 cup
11. Salt and ground black pepper to taste - 1 cup

How to cook deliciously - Vegan Jackfruit Curry

1. Stage

Heat coconut oil in a large skillet over medium high heat. Cook and stir jackfruit until cooked through, about 5 minutes. Add onion and garlic; cook over medium heat until softened, about 6 minutes.

Stir ginger and curry powder into jackfruit; mix until flavors combine, about 2 minutes. Add vegetable broth, baby corn, and potatoes; cook until potatoes soften, 7 to 10 minutes.
