Ingredients for - Grilled Caribbean Free Range Chicken

1. Rum - 1 cup
2. Light soy sauce - 5 tablespoons
3. Lime juice - ¼ cup
4. Brown sugar - ¼ cup
5. Garlic, minced - 12 cloves
6. Finely minced fresh ginger root - 2 ½ tablespoons
7. Dried thyme - 2 teaspoons
8. Salt - 1 teaspoon
9. Ground white pepper - 1 teaspoon
10. Hot pepper sauce (e.g. Tabasco™) to taste - 7 drops
11. Serrano pepper, finely chopped - 1
12. Skinless, boneless chicken breast halves - 4 pounds

How to cook deliciously - Grilled Caribbean Free Range Chicken

1. Stage

In a bowl, mix the rum, soy sauce, lime juice, brown sugar, garlic, ginger, thyme, salt, pepper, hot pepper sauce, and serrano pepper. Pierce the chicken on all sides with a fork. Place chicken in a shallow container, and cover with the marinade. Seal container, and marinate chicken in the refrigerator 8 hours or overnight.

Preheat grill for high heat.

Lightly oil grill grate. Discard marinade and place chicken on the grill. Cook 8 minutes on each side, or until juices run clear.
