1. Black lentils 1 ½ cups
2. Vegetable broth 2 quarts
3. Diced tomatoes 3 cups
4. Carrots, peeled and diced 10
5. Onion, cut into 1/2-inch dice 1
6. Turnips, peeled and diced 2 small
7. Green bell pepper, diced 1
8. Unsalted butter 3 tablespoons
9. Minced ginger 2 tablespoons
10. Garlic, minced 2 cloves
11. Ground coriander ½ teaspoon
12. Ground cumin ½ teaspoon
13. Salt to taste ½ teaspoon

How to cook deliciously - Black Lentil Veggie Soup

1 . Stage

Place black lentils in a microwave-safe bowl and cover with 4 cups water. Microwave until softened, about 5 minutes. Stir and add more water if needed. Microwave for 5 minutes more. Drain and rinse.

2 . Stage

Combine vegetable broth, tomatoes, carrots, onion, turnips, green bell pepper, butter, ginger, garlic, coriander, cumin, and salt in a large slow cooker. Stir in lentils.

3 . Stage

Cook on High until carrots are tender, 4 to 6 hours.
