1. Applesauce - ½ cup
2. Brown sugar - 1 tablespoon
3. Ground coriander - 1 tablespoon
4. Ground cayenne pepper - 1 teaspoon
5. Ground cumin - 1 teaspoon
6. Dried oregano - 1 teaspoon
7. Ground cloves - ½ teaspoon
8. Dried rosemary - ½ teaspoon
9. Dried sage - ½ teaspoon
10. Dried thyme - ¼ teaspoon
11. Asafoetida powder (Optional) - 1 pinch
12. Black beans - 1 (15 ounce) can
13. Tomato paste - 1 (6 ounce) can
14. Garlic, minced - 2 cloves
15. Onion, chopped - 1
16. Yellow squash, chopped - 1
17. Carrots, chopped - 2
18. Sweet potato, peeled and diced - 1
19. Chopped fresh mushrooms - 1 cup
20. Water, or as needed - 1 quart

How to cook deliciously - Vegetarian Black Bean Chili

1. Stage

In a large pot over medium-low heat, mix the applesauce, brown sugar, coriander, cayenne pepper, cumin, oregano, cloves, rosemary, sage, thyme and asafoetida powder. Cook just until heated through. Stir in black beans and tomato paste. Mix in garlic, onion, squash, carrots, sweet potato and mushrooms. Pour in enough water to cover. Bring to a boil, reduce heat to low and simmer 45 minutes, stirring occasionally.
