Ingredients for - Yellow Curry Fried Rice

1. Vegetable oil 4 tablespoons
2. Zucchini, diced 2 medium
3. Carrot, peeled and minced 1 medium
4. Onion, minced 1 small
5. Celery, minced 1 stalk
6. Red bell pepper, minced ½ medium
7. Jalapeno pepper, seeded and minced ½ medium
8. Slivered almonds ¼ cup
9. Soy sauce, or more to taste 2 tablespoons
10. Cooked rice 1 ½ cups
11. Garlic, or more to taste, minced 2 cloves
12. Minced fresh ginger 1 tablespoon
13. Yellow curry powder 1 tablespoon
14. Dried basil 1 tablespoon
15. Ground turmeric 1 teaspoon
16. Ground black pepper 1 teaspoon
17. Ground coriander ½ teaspoon
18. Cayenne pepper ½ teaspoon
19. Salt to taste ½ teaspoon
20. Salted butter 1 tablespoon

How to cook deliciously - Yellow Curry Fried Rice

1 . Stage

Heat oil in a large skillet or wok over medium-high heat. Add zucchini, carrot, onion, celery, bell pepper, jalapeño, and almonds; sauté until zucchini is slightly soft, about 5 minutes.

2 . Stage

Add 1 tablespoon soy sauce and sauté for a few seconds. Add cooked rice, garlic, remaining 1 tablespoon soy sauce, ginger, curry powder, basil, turmeric, black pepper, coriander, cayenne, and salt. Sauté until rice is heated through and takes on a nice toasty texture, about 5 minutes.

3 . Stage

Remove from the heat and stir in butter. Cover and let sit for about 3 minutes before serving.
