How to cook deliciously - Zucchini Grilled Cheese
1. Stage
Squeeze excess moisture out of zucchini with a clean kitchen towel. In a medium bowl, combine zucchini, egg, scallions, Parmesan, and cornstarch; season with salt and pepper.

In large skillet over medium heat, pour oil to coat bottom of skillet. Scoop about 1/4 c. zucchini mixture onto one side of skillet and shape into a small square. Repeat to form another patty on the other side. Cook, turning halfway through, until lightly golden on both sides, about 4 minutes per side. Transfer to paper towels and let drain. Repeat with remaining zucchini mixture. Wipe out skillet.
3. Stage
In same skillet over medium heat, arrange 2 zucchini patties side by side. Top patties with about half of cheese, then place 2 more zucchini patties on top to form 2 sandwiches. Cook, turning halfway through, until cheese is melted, about 2 minutes per side.
4. Stage
Transfer to a plate. Repeat with remaining zucchini patties and cheese.
