Ingredients for - Shrimp & Grits

1. 2 c. low-sodium chicken broth -
2. 2 c. water -
3. Kosher salt -
4. 1 c. corn grits -
5. 4 tbsp. unsalted butter, cubed  -
6. 4 oz. yellow cheddar cheese, shredded (1 c.) -
7. Freshly ground black pepper -
8. 10 oz. thick-cut bacon, cut into ½” slices -
9. 1 lb. large tail-on shrimp, peeled and deveined -
10. 2 cloves garlic, minced -
11. 1 tsp. dried oregano -
12. 1/4 tsp. paprika  -
13. 4 scallions, thinly sliced, plus more for garnish -
14. Juice of 1/2 lemon -

How to cook deliciously - Shrimp & Grits

1. Stage

In a medium saucepan, bring chicken broth and water to a boil and season generously with ½ tsp. salt. Reduce heat so mixture is at a simmer then whisk in grits. Simmer, stirring constantly, until grits have absorbed liquid and are very tender, about 15 minutes. Stir in butter and cheese, then season with additional salt and pepper to taste.

Meanwhile, in a large skillet over medium heat, cook bacon until crispy, about 8 minutes. Leave about 2 tablespoons bacon fat in skillet. 

3. Stage

In a large bowl, toss shrimp with garlic, oregano, paprika, and ½ teaspoon salt. Add to skillet and cook, stirring occasionally, until shrimp is pink and cooked through, 4-6 minutes. Stir in scallions and lemon juice.

Serve shrimp over grits and top with chopped bacon.
