Ingredients for - Apple Thyme Chicken

1. 1/2 cup apple juice -
2. 1/2 cup lemon juice -
3. 2 tablespoons cider vinegar -
4. 2 tablespoons canola oil -
5. 4 teaspoons minced fresh thyme or 1-1/2 teaspoons dried thyme -
6. 4 boneless skinless chicken breast halves (6 ounces each) -
7. 2 medium tart apples, peeled and quartered -
8. 1 tablespoon honey -
9. 1/2 teaspoon salt -
10. Sauce: -
11. 2 teaspoons cornstarch -
12. 3/4 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme -
13. 3/4 cup apple juice -

How to cook deliciously - Apple Thyme Chicken

1. Stage

For marinade, in a bowl, mix first 5 ingredients. In another bowl, combine chicken and 3/4 cup marinade; refrigerate, covered, at least 2 hours. Reserve remaining marinade; cover and refrigerate.

2. Stage

Toss apples in reserved marinade; remove apples with a slotted spoon. Stir honey into remaining apple marinade. Place apples on an oiled grill rack over medium heat; grill, uncovered, until tender, 4-6 minutes, turning and brushing frequently with honey mixture.

3. Stage

Drain chicken, discarding chicken marinade. Sprinkle chicken with salt. Grill, covered, over medium heat until a thermometer reads 165°, 5-7 minutes per side; brush frequently with remaining honey mixture during the last 4 minutes.

4. Stage

In a saucepan, mix sauce ingredients until smooth; bring to a boil. Cook and stir until thickened, about 2 minutes; stir in apples. Serve with chicken.
