Ingredients for - Black Bean Salad

1. 1 (15 ounce) can black beans, rinsed and drained -
2. 1 1/2 cups corn kernels, defrosted if frozen -
3. 1/2 cup chopped scallions or shallots -
4. 1/2 jalapeño pepper, seeded and minced, or 1/2 pickled jalapeño pepper, minced but not seeded -
5. 1 red bell pepper, seeded and chopped (and/or 3 plum tomatoes, seeded and chopped) -
6. 2 tablespoons lime juice -
7. 1 tablespoon extra virgin olive oil -
8. 1 avocado, seeded, peeled, and cut into chunks -
9. 1/2 to 1 teaspoon sugar -
10. Salt and pepper to taste -
11. 1/2 cup chopped fresh cilantro -

How to cook deliciously - Black Bean Salad

1. Stage

Combine everything but the avocado and herbs: In a large bowl, gently mix the black beans, corn, scallions, jalapeños, tomatoes or red bell pepper, lime juice, and olive oil. Then, gently fold in the chopped avocados.

2. Stage

Season and chill: Add salt and pepper to taste. Sprinkle with sugar to taste, enough to balance the acidity from the lime juice. Chill.

3. Stage
