Ingredients for - Buttercream-Coconut Cake Icing

1. Unsalted butter, softened ½ cup
2. Vegetable shortening ½ cup
3. Vanilla extract 1 teaspoon
4. Confectioners' sugar, sifted 3 cups
5. Milk, or as needed 2 tablespoons
6. Sweetened flaked coconut, divided 1 (7 ounce) package
7. Chopped pecans ¼ cup

How to cook deliciously - Buttercream-Coconut Cake Icing

1 . Stage

Beat butter and shortening with an electric mixer in a large bowl until smooth; beat in vanilla extract.

2 . Stage

Gradually beat confectioners' sugar into butter mixture until well blended. The mixture will appear dry.

3 . Stage

Stir enough milk into butter mixture to achieve desired consistency for icing.

4 . Stage

Fold half the coconut into the icing; spread icing over cake.

5 . Stage

Sprinkle remaining coconut and pecans over icing.
