5. Brown sugar - ¼ cup
6. Sherry vinegar - ¼ cup
7. Fresh thyme leaves, divided - 1 ½ teaspoons
8. Freshly ground black pepper - 1 teaspoon
9. Cayenne pepper - 1 pinch
10. Water - ½ cup
11. Balsamic Vinegar - 2 teaspoons
12. Extra-virgin olive oil - 2 teaspoons

1. Stage

Warm a large, heavy-bottomed pot over medium heat. Add bacon; cook and stir until crispy and rendered fat starts to foam, about 10 minutes.
