Ingredients for - Southwestern Pasta Salad

1. Rotini pasta ½ (16 ounce) package
2. Vegetable oil ⅓ cup
3. Fresh lime juice ¼ cup
4. Chili powder, or to taste 2 tablespoons
5. Ground cumin 2 teaspoons
6. Salt ½ teaspoon
7. Garlic, crushed 2 cloves
8. Whole kernel corn 1 ½ cups
9. Black beans, drained and rinsed 1 (15 ounce) can
10. Diced green bell pepper ½ cup
11. Diced red bell pepper ½ cup
12. Fresh cilantro leaves ½ cup
13. Chopped roma (plum) tomatoes 1 cup

How to cook deliciously - Southwestern Pasta Salad

1 . Stage

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

2 . Stage

In a large bowl combine oil, lime juice, chili powder, cumin, salt and garlic. Stir in pasta and set aside to cool to room temperature, stirring occasionally.

3 . Stage

Stir in corn, beans, green pepper, red pepper and 1/2 of the cilantro leaves. Spoon onto a platter and garnish with tomatoes and remaining cilantro. Serve chilled or at room temperature.
