1. Olive oil 2 tablespoons
2. Cinnamon stick 1 (2 inch) piece
3. Whole cardamom pod 1
4. Star anise pod ½
5. Whole cloves 3
6. Chopped fresh curry leaves 2 teaspoons
7. Chopped shallots 1 tablespoon
8. Garlic, chopped 4 cloves
9. Fresh ginger root, chopped 1 slice
10. Curry paste 4 tablespoons
11. Thick coconut milk ½ cup
12. Water 2 cups
13. Skinless, boneless chicken breast halves - cut into 2 inch pieces 3 pounds
14. Tamarind juice 2 tablespoons
15. Salt to taste 2 tablespoons

How to cook deliciously - Chicken Curry V

1 . Stage

Heat oil in a large, deep skillet over medium heat. Saute the cinnamon, cardamom, anise, cloves and curry leaves for 2 to 3 minutes, then stir in shallots, garlic and ginger and saute until fragrant. Stir in curry paste and cook for 5 minutes, stirring constantly.

2 . Stage

Pour in the coconut milk and water and let simmer for 3 to 4 minutes; add chicken, tamarind juice and salt and simmer, stirring occasionally, for 20 minutes.
