Ingredients for - Sweet and Spicy Jerk Shrimp

1. Large shrimp in shells - 1 ½ pounds
2. Pineapple slices packed in 100% juice, drained, and cut into 2-inch pieces - 1 (20 ounce) can
3. Red bell peppers, cut into thin strips - 2
4. Red onion, sliced - 1 large
5. Jalapeno pepper - halved lengthwise, seeded, and sliced - 1
6. Olive oil - 2 tablespoons
7. Jamaican jerk seasoning - 1 tablespoon
8. Chopped fresh cilantro - ½ cup
9. Hot cooked brown rice - 2 cups
10. Lime, cut into wedges - 1

How to cook deliciously - Sweet and Spicy Jerk Shrimp

1. Stage

Preheat the oven to 425 degrees F (220 degrees C). Line two 10x15-inch baking pans with foil.

Peel and devein shrimp, leaving tails intact if desired. Rinse shrimp and pat dry.

3. Stage

Gently toss shrimp together with pineapple, bell peppers, red onion, jalapeno, oil, and jerk seasoning in a large bowl. Divide mixture between the prepared pans.

Roast in the preheated oven until shrimp are opaque, about 15 minutes.
