1. Olive oil - 2 teaspoons
2. Zucchini, roughly chopped - 1 small
3. Yellow squash, roughly chopped - 1 small
4. Red bell pepper, roughly chopped - ½
5. Green bell pepper, roughly chopped - ½
6. Roughly chopped red onion - ¼ cup
7. Fresh corn kernels - 4 cups
8. White sugar - 2 teaspoons
9. Margarine - 1 teaspoon
10. Dried basil - ½ teaspoon
11. Salt - ¼ teaspoon

How to cook deliciously - Mama Nina's Corn Succotash

1. Stage

Heat oil in large pan over medium-high heat. Add zucchini, squash, bell peppers, and red onion and cook until just tender, 5 to 7 minutes. Remove from the pan.

2. Stage

Stir corn, sugar, margarine, basil, and salt into the pan and cook over medium-high heat for 5 minutes. Gently fold in sauteed vegetables using a large spoon. Remove from heat and let cool for 10 minutes before serving.
