1. Artichoke hearts, drained and quartered - 1 cup
2. Olive oil - 1 teaspoon
3. Sea salt to taste - 1 teaspoon
4. Olive oil - 3 tablespoons
5. Freshly squeezed lemon juice - 2 tablespoons
6. Chopped fresh oregano - 1 tablespoon
7. Torn romaine lettuce - 6 cups
8. Crumbled feta cheese - ½ cup

How to cook deliciously - Roasted Artichoke Greek Salad

1. Stage

Preheat the oven to 375 degrees F (190 degrees C).

Place artichokes on a baking sheet. Drizzle with 1 teaspoon olive oil and sprinkle with sea salt.

Bake in the preheated oven on the top rack until golden, about 25 minutes. Remove from the oven and let cool at least 10 minutes.

While artichokes cool, whisk 3 tablespoons olive oil, lemon juice, oregano, and sea salt to taste together in a large bowl for dressing. Set aside.
