1. 1 large sweet potato -
2. 1/2 pound lean ground beef (90% lean) -
3. 1/4 cup chopped onion -
4. 1 can (8-3/4 ounces) whole kernel corn, drained -
5. 1/2 cup tomato sauce -
6. Dash each ground cinnamon, allspice and nutmeg -
7. 1 tablespoon butter -
8. 1 tablespoon 2% milk -
9. 1/8 teaspoon salt -
10. 1/8 teaspoon pepper -

How to cook deliciously - Sweet Potato Shepherd’s Pie

1. Stage

Preheat the oven to 350°F. Scrub the sweet potato well, and pierce it all over with a fork. Place on a microwave-safe plate. Microwave, uncovered, on high for 10 to 12 minutes or until tender, turning once. Editor's Tip: You may also boil the whole, scrubbed sweet potato until tender, or scrub, slice and steam the sweet potato.

Meanwhile, in a large skillet, cook the beef and onion until the meat is no longer pink. Drain excess fat. Stir in the corn, tomato sauce, cinnamon, allspice and nutmeg. Coat a 1-quart baking dish with cooking spray. Spoon the beef mixture into the baking dish.

When the sweet potato is cool enough to handle, cut it in half. Scoop out the flesh, and place in a small bowl. Use a fork to mash the sweet potato with the butter, milk, salt and pepper. Using a spoon or two, spread the sweet potato mash evenly over the meat mixture.

Bake the pie, uncovered, for 25 to 30 minutes or until heated through.
