1. 4 bone-in, skinless chicken drumsticks
2. 4 bone-in, skinless chicken thighs
3. Coarse salt and ground pepper
4. 1 large egg
5. 2 c. crushed cornflakes
6. 1 tbsp. olive oil
7. 1/2 tsp. cayenne pepper (optional)

1 . Stage

Preheat oven to 400 degrees. Rinse chicken, and pat dry. Season generously with salt and pepper.

2 . Stage

In a small bowl, whisk egg with 1 tablespoon water. In a large bowl, mix cornflakes with oil, cayenne, and 1 teaspoon salt.

3 . Stage

Coat chicken. Bake until golden brown and crisp, about 30 minutes. Sprinkle with salt and pepper before serving.
