1. Anaheim chile peppers - 3
2. Crumbled Cotija cheese - 1 (12 ounce) package
3. Plum tomatoes, seeded and chopped - 2
4. Sweet onion, chopped - 1
5. Chopped fresh cilantro (Optional) - ¼ cup

Remove seeds from chile peppers and discard. Chop peppers and place in a bowl.

Add cotija cheese, tomatoes, onion, and cilantro; mix together. Serve immediately or refrigerate until ready to serve.
