Ingredients for - Corrigan's Minestrone

1. Olive oil - 2 tablespoons
2. Potatoes, peeled and cubed - 5
3. Carrots, chopped - 5
4. Celery, chopped - 4 stalks
5. Sweet onion, chopped - 1
6. Garlic, chopped - 3 cloves
7. Tomato paste - 1 (6 ounce) can
8. Kidney beans, drained and rinsed - 1 (15 ounce) can
9. Vegetable broth - 1 (14 ounce) can
10. Water - 1 ½ quarts
11. Chopped fresh basil - 3 tablespoons
12. Chopped fresh oregano - 2 tablespoons
13. Salt - 1 tablespoon
14. Uncooked elbow macaroni - 2 cups

How to cook deliciously - Corrigan's Minestrone

1. Stage

Heat olive oil in a large pot over medium heat. Stir potatoes, carrots, celery, onion and garlic into pot. Mix in tomato paste, beans, broth and water. Season with basil, oregano and salt. Cook and stir 30 minutes, or until vegetables are tender.

2. Stage

Mix macaroni into pot. Continue cooking 10 minutes, or until macaroni is tender.
