Add 1 tablespoon of cognac to the broth. Wait for the alcohol to evaporate. Grate ginger on a fine grater and add it to the broth. Ginger will make the broth rich and spicy. Turn down the heat and simmer until the vegetables are cooked.

Separately in a bowl whisk the yolks, gradually add the flour, until a semi-liquid dough forms. The dough should drip from the spoon.
