2. Soy flour - 1 cup
3. White sugar - ½ cup
4. Salt - 1 ½ teaspoons
5. Pumpkin Puree - 1 (15 ounce) can
6. Oil - ½ cup
7. Eggs, lightly beaten - 2
8. Infant rice cereal - ½ cup
9. Baking powder - 1 ½ tablespoons
10. Semisweet chocolate chips (Optional) - 1 cup

1. Stage

Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.

Whisk rice flour, soy flour, sugar, and salt together in a bowl; stir in pumpkin, oil, and eggs.
