1 . Stage
In a deep pan pour water to the height of "two fingers", put it on the fire, add chicken shanks, garlic clove and bay leaf. Simmer for 20 minutes, if the water evaporates, add a little liquid, but do not overdo it, as the chicken should not boil, but only stew! After the specified time, remove from the heat and allow the shanks to cool slightly.
2 . Stage
In one deep bowl (bowl) mix eggs and mustard. In another bowl mix all the other dry ingredients for breading - flour, starch, paprika, dried rosemary and thyme (or fresh, chopped), salt and pepper.

First dip the shins on all sides in the egg mixture...

Prepare all the chicken shanks in this way.

In a saucepan, heat just the right amount of vegetable oil for frying (I use peanut butter, which never fails me when deep frying foods!) Fry chicken shanks in small batches (so as not to lower the temperature of the oil...) on all sides, until golden.
7 . Stage
Place the finished chicken on a paper towel and serve hot!
