1. 1 large head cauliflower, grated (about 3 cups), squeezed dry of excess liquid -
2. 2 1/2 c. shredded mozzarella, divided -
3. 2 large eggs -
4. 1 c. freshly grated Parmesan, divided -
5. 1 tsp. garlic powder -
6. Kosher salt -
7. Freshly ground black pepper -
8. 2 tbsp. pizza sauce -
9. 1/3 c. mini pepperoni -
10. Torn fresh basil, for garnish -

How to cook deliciously - Deep Dish Cauliflower Pizza

1. Stage

Preheat oven to 425º and grease a cast-iron skillet with cooking spray. In a large bowl, combine cauliflower, 1 cup mozzarella, eggs, 1/2 cup Parmesan, and garlic powder and season with salt and pepper.

2. Stage

Press mixture into skillet, making sure to get up the sides, and bake until deeply golden and dry, 25 minutes.

3. Stage

Spoon a thin layer of pizza sauce over crust and sprinkle with remaining mozzarella and Parmesan. Top with mini pepperoni and bake 5 minutes more.

4. Stage

Sprinkle with basil, slice, and serve.
